lb. fish, in lg. bite-size pieces, or peeled shrimp, shelled clams or shelled mussels |

Step 1 |
Prepare fish for cooking. Combine batter ingredients, mixing carefully to keep a light consistency. Heat oil to 350 degrees. Dip fish pieces in batter and drop into hot oil a few pieces at a time. As each piece turns golden brown, remove to a paper towel lined platter to drain. Serve with tartar sauce (recipe follows) or your favorite salsa. |
