lb. fish, in lg. bite-size pieces, or peeled shrimp, shelled clams or shelled mussels

2

c. flour

1

tbsp. sugar

Salt and other spices to taste

2

tbsp. oil

4

egg yolks

4

egg whites, stiffly beaten

½c. beer

Oil for deep frying

Mayonnaise

Pickle relish

Capers

Catsup

Horseradish

Lemon (or lime) juice

Chopped tomatoes

Onion

Chilis

Cilantro

Step 1

Prepare fish for cooking. Combine batter ingredients, mixing carefully to keep a light consistency. Heat oil to 350 degrees. Dip fish pieces in batter and drop into hot oil a few pieces at a time. As each piece turns golden brown, remove to a paper towel lined platter to drain. Serve with tartar sauce (recipe follows) or your favorite salsa.
