Crispy Eggplant Fritters

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

8 smalls eggplant (cut roundels)
1 cup milk
10 pepper corns - crushed
2 tablespoons maida / all purpose flour
2 teaspoons salt
1 teaspoon chilli flakes

Preparation

In a bowl, mix the all purpose flout/ maida, salt and pepper. Keep aside.

Soak the cut eggplants in milk for about 5 min.

Remove them from milk and dust them over seasoned flour mix.

Deep fry them in oil and sprinkle the chilli flakes over it.

Serve hot with chilli garlic sauce/ ketchup.

 



About

This is a very simple starter and even a total illiterate on cooking can make it taste great. Such easy an straight forward is its recipe. My cousin sister, a graduate in Hotel Management shared this recipe with me. We made this in a jiffy for the guests who popped in without any notice ;-)
