[edit] Preparation

Step 1

Rinse the chickpeas in a colander, then spread them on a clean towel to dry or pat dry with paper towels

Step 2

In a bowl, toss chickpeas with enough olive oil to coat (but not drench)

Step 3

Spread on a baking sheet and bake in a 400 degree F oven for 15 minutes

Step 4

Stir, then bake for an additional 15 minutes, or until chickpeas are crispy.

Any spices can be added to this recipe, such as zatar, ras el hanout, cumin, herbes de Provence, etc..
