I wish I could say that I came up with the brilliant idea to bake chickpeas, but alas, I cannot. The truth is I was getting ready for work one ...

Step 1 |
Rinse the chickpeas in a colander, then spread them on a clean towel to dry or pat dry with paper towels |
Step 2 |
In a bowl, toss chickpeas with enough olive oil to coat (but not drench) |
Step 3 |
Spread on a baking sheet and bake in a 400 degree F oven for 15 minutes |
Step 4 |
Stir, then bake for an additional 15 minutes, or until chickpeas are crispy. |
Any spices can be added to this recipe, such as zatar, ras el hanout, cumin, herbes de Provence, etc..
