Plantain With Garlic Sauce

Ingredients

2 large plantains, very ripe
4 garlic cloves, finely minced
1/2 cup salad oil
3 tablespoons vinegar (white)
1/2 teaspoon salt
1/4 cup oil for frying

Preparation

Peel and slice plantain about 1/4" thick. Heat oil. Brown plantain, turning once. Remove from pan. Set on platter (keep warm).

Mix together garlic, vinegar and salt, pour the salad oil into mixture; stir well. Pour over plantain.
