Tomato Fava Dip

Ingredients

1 can whole peeled tomatoes, chopped finely
3 cloves garlic, finely chopped
2 tablespoons oil
Salt to taste
1 onion, finely diced
2 tablespoons tomato paste
1/2 teaspoon ground cumin

Preparation

Fry the onion until translucent, add tomatoes, garlic, and cumin. Stir for 3 minutes on medium heat.

Add the fava and mash with a potato masher. Stir on low heat

For 2 minutes.

Add tomato paste and stir to mix it. Add the juice from the canned tomatoes and stir for 2 minutes on medium heat until thickens like a thick jam.

Serve cooled with olive oil drizzled over and warm pita bread.
