Pineapple Coconut Macaroon

Ingredients

INGREDIENTS
1 can crushed pineapple (including syrup) 500 gm
2 cups Brown Sugar 1
teaspoons /2 Vanila Extract

Place can crushed pineapple and sugar in a pan and stir over low heat.Let the syrup get evaporated and caramelize pineapple.

Transfer it to a mixing bowl and add coconut,egg white.vanila and mix.

Scoop the mixture and drop on a lightly greased baking sheet( 1 inch in between each scoop).

Bake in a preheated oven (350 degree) for 13-15 mins

Cool and serve.It will make around 30 pieces.

This recipes is from Yummy magazine...its one of my favorite magazines in Philippines. I am so addicted to this magazine that I never miss even a single issue and one thing for sure I will miss when I move back to India is this magazine.

It's a typical Pinoy dessert and pineapple adds extra tang to it.
