- 3 ounces spring greens (1/2 a bag)
- 1/4 red onion
- 1 large carrot
- 1 small bulb fennel
- 2 large ripe kiwis
- 1 mandarin
- 2 large ripe strawberries
- 1/4 cup walnut oil
- 1/3 cup apple cider vinegar
- 1 teaspoon honey
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/8 teaspoon ground ginger
- 2 teaspoons whole grain mustard
- 1/2 cup walnuts

Step 1
Place all salad ingredients in a large mixing bowl.

In a blender or food processor, add all of the vinaigrette ingredients.

Blend the vinaigrette ingredients on a high setting until thoroughly mixed.

Add the desired amount of vinaigrette to the salad ingredients.

Toss the salad until the vinaigrette evenly coats the vegetables and fruit.

Serve in heaping portions, garnished with walnuts.
