No Bake Cookies

Ingredients

1 3/4 cups sugar
1/2 cup butter (1 stick)
1/2 cup milk
4 tablespoons cocoa powder
1/2 cup peanut butter(crunchy or creamy)
1 teaspoon vanilla extract

Preparation

Combine sugar, butter, milk and cocoa in medium saucepan and cook over medium-high heat, constantly stirring, until full rolling boil.

Reduce heat(if necassary to prevent boil over) and continue to boil and stir for 1 1/2 minutes.

Remove from heat.

Add peanut butter and stir till melted.

Add oats and vanilla and stir to combine.

Drop from tablespoon onto wax paper where they will harden as they cool.

This recipe was given to me over 20 years ago and has been the most requested cookie in my house!

Be sure to bring it to a rolling boil, constantly stirring to prevent the milk from scalding and for 1 1/2 minutes to reach the proper temperature it needs to set up. Less cooking time could result in too soft cookies that don't set well.
