Savory and Sweet Watermelon Salad

Ingredients

2 cups cubed seedless watermelon
2 cups cubed cucumber
1 small red onion, finely diced
1 cup ricotta salata cheese (or feta cheese), crumbled
1 cup mint leaves, chopped
1/4 cup extra virgin olinve oil
1/4 cup balsamic vinegar

Preparation

In a large bowl, combine cucumber, onion, mint leaves with the olive oil and balsamic vinegar.

Mix until everything is well incorporated.

Add watermelon and cheese and gently mix into the salad.
