Recipe: Gluten-Free Waffles edit

1 cup brown rice or rice flour

1/2 cup potato starch

1/4 cup tapioca flour

2 teaspoons baking powder

1 teaspoon salt

1/4 cup oil

2 eggs

1 1/2 cups buttermilk

1 teaspoon sugar

Step 1

Whisk together all ingredients, and pour into waffle iron, in batches.

Homemade waffles created without any gluten (which is present in wheat, barely, rye and many other tricky hiding places). Add a bit more milk if too thick or a bit of rice flour if too runny.
