Now that my son is getting a little bit more independent and doesn’t need Mom every single second, I think that I am slowly finding my inspiration to cook ...
1 cup brown rice or rice flour |

1/2 cup potato starch |

1/4 cup tapioca flour |

2 teaspoons baking powder |
|
1 teaspoon salt |
|
1/4 cup oil |
|
2 eggs |
|
1 1/2 cups buttermilk |
|
1 teaspoon sugar |
Homemade waffles created without any gluten (which is present in wheat, barely, rye and many other tricky hiding places). Add a bit more milk if too thick or a bit of rice flour if too runny.
