Ingredients

1 rib of celery (optional)
a few globs of veggie spread (or plain greek yogurt)
a little bit of buffalo sauce (to taste)

Preparation

Chop celery into bite-sized slices

Mix all ingredients

Use to top crackers or in a sandwich or wrap

Morning! How is your Tuesday going? Mine is going well. In an effort to get some quality sleep (I only got 5 hours on Sunday night), I skipped blogging last night and headed right to bed. But, I didn’t end up falling asleep until about 11pm anyhow! Ugh!

I have to admit I was super surprised as the response I got from readers about my acne (if you haven’t read that post, click here). I had no idea there were so many other people suffering with adult acne, I guess I am not alone. Thanks to all of you for sharing your experiences and thanks to my brother and sister-in-law that commented that never even noticed I had acne, they are very sweet, but are filthy liars ;)

Anyhow, let me back up to yesterday evening. During class to keep me from wanting to chew my arm off (since dinner was eaten at 9pm) I snacked on some grapes and a Honey Almond Flax Kashi bar.

In class, We were supposed to watch a documentary that Diane Sawyer did about cyber bullying, but we didn’t get to it. I was kind of disappointed because it seems so interesting. I know I am a dork! Has anyone seen it? Is it interesting? I think it may be a few years old.We will be watching it next week, I think.

After class, I went to my par-time job where I worked until almost 9pm. By the time I got home, I was feeling hungry and tired. If you remember, I got up at 5:30 am for Body Pump and had been going non-stop since! This is my life, people!

When it was time to eat I just wanted something quick. I whipped up some Buffalo Tuna Salad.

* 1 can of tuna
* a few globs of veggie spread
* a little bit of buffalo sauce

I used this veggie spread.

You can also use plan greek yogurt too, they both work fine.

I added the the Tuna Salad to a whole wheat wrap, topped it with american cheese, folded it up and pressed it on the Forman Grill for a few minutes.

Dessert was a Dark Chocolate Pumpkin cookie.

YUM YUM!

This morning when I woke up, I wasn’t very hungry and nothing seemed appetizing at all. So, I got ready for work and did some laundry while waiting for the hunger and breakfast craving to arrive. But, it never did. I wonder what was going on… Anyhow, not eating would be a bad idea, so I ate the only thing I felt I could stomach.

2 slices of Ezekiel Cinnamon Raisin Toast with Earth Balance Buttery Spread and some grapes…with coffee.

Here is today’s outfit:

Hot Pink Cardigan (Old Navy), White Cami (H&M- wow I have a lot of white cami’s from H&M, huh?), Brown pencil Skirt (TJ MAXX), Brown Boots (TJ MAXX), Tights (Target). I actually got this skirt taken in 2 inches in the waist and it fits PERFECT now :)

Here is a close up of the necklace, which was my grandmother’s. I love wearing something of hers when I can, it makes my day, I miss her a lot!
