Breadnut Cakes

Ingredients

14 tablespoons boiled breadnuts
6 tablespoons sugar
6 tablespoons softened butter
9 tablespoons flour
2/3 teaspoon baking powder
5 tablespoons milk

Preparation

Purée the breadnuts with the milk. Set aside.

Beat the butter with the sugar until smooth and creamy.

Add the eggs one at a time while mixing.

Add the breadnut purée, combining well.

Fold in the sifted flour with the baking powder until smooth.

Pre-heat the oven to 180ºC

Drop batter in spoonfuls into muffin tins.

Place pan on a baking sheet.

Bake for 15 minutes.

About

This recipe was adapted from one originally intended for chestnuts. It is not overly sweet, so I'd recommend adding a vanilla syrup to sweeten it.
