Cornish Hen with Wild Rice

Cornish hen are a great alternative to chicken. Smaller, testy and fast to cook. Found them at our local grocery store, I just could not pass up the opportunity to purchase them. Cornish hen, to me, almost always calls for wild rice. The recipe created itself as I was preparing it. The result was pure and simple delicious. My 8 years old ate 3/4 of the Cornish hen, so that should tell you something.

  • chicken broth
  • 1 glass white wine
  • olive oil
  • fresh rosemary springs
  • salt
  • pepper
  • cloves peeled garlic(optional)
  • 4 hens Cornish hens
  • 2 whole lemons, thinly sliced

Instructions

Step 1

Preheat the oven to 375ºF.

Clean the Cornish hens and pat them dry.

Place the cleaned hens in an ovenproof baking dish.

In the cavity of each Cornish hen, generously sprinkle salt and pepper.

Add desired garlic cloves, 2 slices of the lemon, and fresh rosemary into each hen's cavity.

Brush olive oil on the outside skin of each hen.

Generously sprinkle the outside skin with salt and some pepper.

Add the chicken broth and white wine to the baking dish around the hens.

Arrange any remaining lemon slices and additional garlic cloves (if desired) around the Cornish hens in the dish.

Place the baking dish in the hot oven.

Cook until no more juices are running from the chicken, indicating it's fully cooked.
