Cheddar Cheese Sauce

Ingredients

1 cup cold milk
1 tablespoon Corn Starch
2 tablespoons butter

Preparation

Mix cold milk and corn starch in a small sauce pan.

Heat until it boils, then reduce to a slow simmer, then add the butter.

Stir in the cheddar cheese and keep stirring until fully integrated and smooth.

This basic sauce is very versatile. It can be served on top of steamed vegetables (like cauliflower or broccoli) or as a topping for many other foods such as pork chops or french fries.

Try adding other flavorings, such as salsa for a Mexican flair to pour over nachos or bacon bits to top baked potatoes. Can also be served as a hot dip.

You can adjust to your taste by adding mild or extra sharp cheddar cheeses. Other good cheeses to experiment with include smoked cheddar and pepper jack.

This sauce makes a good replacement for melted Velveeta.
