Yakisoba

Ingredients

1 pack Yakisoba noodles or 2 squares of Vietnamese egg noodles
4 tablespoons Yakisoba sauce. If you don't have yakisoba sauce, use the following:
2 tablespoons oyster sauce
2 tablespoons light soy sauce (Kikkoman brand)
2 tablespoons mirin
2 tablespoons sake
2 tablespoons honey
1 bell pepper cut into strips
1 carrot, julienned
1/4 head of cabbage, cut into strips

Preparation

1
Cook the noodles according to package directions.
2
Or you can also steam the noodles if you're using authentic yakisoba noodles.
3
Saute onions and bell peppers in oil
4
Add the vegetables
5
Pour the sauce.
6
If there isn't enough liquid, add about 2T water then adjust seasoning.
7
Mix and serve hot.
8
If you're using pre-made yakisoba sauce and you find it too sour, you can add mirin.

About

This is my personal recipe for yakisoba. In Japan, yakisoba is considered as junk food. Normally, yakisoba requires a ready made yakisoba sauce. When I cooked this, yakisoba sauce wasn't available in our local groceries.

You can also add thin beef strips, fish cakes, etc. You can also top this with bonito flakes before serving. Be creative!

For Philippine readers, you can now find yakisoba sauce in Saizen. You can also buy yakisoba packs with pre-cooked noodles and packets of yakisoba sauce at The Landmark Supermarket. This recipe is a result of trial and error. You can experiment with the ingredients as you please. You can visit my blog, www.240baon.blogspot.com, to read more yakisoba recipes and Japanese inspired dishes.
