Swedish “Rårakor” with fried pork and lingonberry

Ingredients

1 kg potatoes
16 slices of smoked or salted pork
butter for frying
salt

Preparation

Peel and grate the potatoes. Add the salt.

Heat butter in skillet over medium heat. Take a scoop of potato and flatten out thinly with a spatula to a flat cake. Fry until crisp and golden brown. Turn over.

Fry the bacon without added butter on medium heat until it is crisp.

Serve “rårakorna” hot with pork and lingonberries.

Here’s another recipe for some traditional Swedish food. Last week we made “rårakor” with fried pork and lingonberry jam. “Rårakor” can also be replaced by potato pancakes but we chose the grated, fried potatoes this time.
