Shrimp and Black Bean Salad

Ingredients

1 pound shrimp
2 cups of black beans
2 cups of corn kernels
2 large diced tomatoes
1/2 cup chopped scallions
1 large avocado diced
1 cup of shredded carrots
1 tsp Picante Passion
1/3 cup Margarita Dressing

Preparation

Spray a saute pan with vegetable or olive oil cooking spray, and saute shrimp which has been tossed in Picante Passion.

When the shrimp is cooked mix it in with a salad of black beans, corn, tomatoes, onion, chopped scallions, avocado and shredded carrots.

Let marinate in the dressing for at least 1 hour, overnight is even better.

Serve in margarita glasses, rims dipped in kosher salt.

Top with a wedge of lime.
