  • 1/4 teaspoon garlic powder
  • 1/3 cup red wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard
  • 2 tablespoons sugar
  • 1/2 cup oil
  • 2 teaspoons brown sugar
  • 1 cup walnut halves
  • 2 teaspoons white sugar
  • 2 whole red pears, cored & thinly sliced
  • 8 ounces Gorgonzola cheese, coarsely crumbled
  • 6 cups Spring salad greens
  • herbs(optional)

Step 1

4-6 minutes

In a small pan, sauté walnut halves and white sugar over medium heat until caramelized, stirring often. They will be light brown and coated with melted sugar. Spread the sugared walnuts on foil or wax paper to cool completely, then break them apart.

For the dressing, combine garlic powder, red wine vinegar, salt, ground mustard, 2 tablespoons sugar, 1/2 cup oil, and brown sugar in a jar or container with a lid and shake well.

Combine Spring salad greens, red pears, and optional herbs in a large salad bowl. Top with the cooled sugared walnuts.

Step 4

Right before serving, toss the salad with the desired amount of dressing. Add the Gorgonzola cheese crumbles at the very last, tossing lightly to incorporate into the salad.
