Peanut Soup A La Paraguaya

Ingredients

3 carrots, or more if you want an orangey colour
1 clove garlic
2 o 3 lemon leaves and/or a stalk of lemon grass

Preparation

Soak peanuts overnight, then peel.

Process with milk until smooth. Process carrots likewise.

Fry vegetables until tender, add bones and fry a little longer.

Then add processed peanut, carrots, lemon leaves or lemon grass, and simmer until well cooked, about 1h 30 m. Soup should be smooth but not too thick.

Add water or milk if necessary. Stir often.

Serve with fried mandioca (yucca).
