Grilled Salmon With Mango-Pineapple Salsa

Ingredients

3 garlic cloves, finely chopped
salt and pepper to taste
4 smalls mangoes, diced
1/2 ripe pineapple, diced
1/4 cup red onion, diced finely
1 jalapeƱo pepper, chopped finely
1/2 cup fresh cilantro, chopped finely
2 stalks spring onions, chopped finely

Preparation

Marinate the salmon steaks with the lemon rind, garlic and salt and pepper to taste for at least half an hour.

In the meanwhile, combine all the salsa ingredients and mix gently. Season to taste with salt and pepper. Refrigerate for at least an hour for flavours to meld.

Turn on the broiler in the oven. Place the salmon on a greased baking sheet and broil the steaks until cooked on one side. Then flip and cook on the second side. Timing can be adjusted depending on the level on doneness you prefer.

Remove steaks from the oven and garnish with the chopped spring onions. Serve immediately with the salsa.

About

If you aren't fond of pineapple you can substitute it with avocado or a ripe papaya.
The salsa goes well with any grilled fish but can also be served with chicken.
