Low Fat Spicy Chicken Wings

Ingredients

10 chicken wings, cut into pieces, skinned, tips set aside for broth
1 cup cornmeal
1 tablespoon chili powder
1/2 teaspoon cumin
carrot sticks
celery sticks

Preparation

Heat oven to 375* F.

Rinse wings, leave damp

Line a 8x8 or 8x10 baking pan with aluminum foil.

In a small paper sack, mix cornmeal, flour, and spices.

Add four pieces of damp chicken wing to the bag, close and shake gently.

Shake off extra coating, and place coated pieces in prepared baking pan.

When each piece is coated, place in 375* oven for 45 minutes.

Allow to stand for 5 to 10 minutes.

Serve wings with a small dish of blue cheese dressing, and a large pile of carrot and celery sticks.

About

I invented this recipe because I love the taste of the Anchor Bar's Buffalo Wings but wanted a low cal version.
Another good trick is to place the coated wings on a rack in a larger baking pan, so all the fat drips off.
I like the easy clean-up: roll up the aluminum foil and recycle, and toss the bag of into the compost-ables.

Yield:

4.0 as an appetizer; 2 as a meal.
