Oat Groats

Ingredients

Preparation

1
Bring 3 or 4 cups of water to a boil.
2
Add oat groats and boil uncovered for about 35 minutes, stirring occasionally.
3
When water starts to take on a milky, slightly thicker appearance, the groats should be cooked.
4
Strain cooked groats, and immediately begin steaming for another 5-7 minutes.
5
Separately, peel and dice apples.
6
Place in frying pan with enough oil to coat the pan.
7
Sprinkle cinnamon, cloves, and nutmeg on top to taste.
8
Fry on low to medium heat until softened but still slightly crunchy.
9
Combine oats (after steaming) with fried apples, and serve hot with maple syrup to taste.

About

Credit to Whole Grains - Every Day, Every Way by Lorna Sass (published by Clarkson Potter in 2006) for how to cook groats. This book recommends covering the oats with a paper towel while steaming.

I added the apple idea. It takes the better part of an hour to prepare, but is well worth the investment of time.
