Eggs

ounces Machaca

1

Bell Pepper

medium Onion

Tomato

tablespoon cooking oil

edit Preparation

Step 1

Crack eggs into a bowl, scramble, and mix in machaca. Set aside so the machaca can rehydrate in the eggs.

Step 2

Chop the tomato and set aside

Step 3

Chop the bell pepper and onions and saute in the oil over a medium heat.

Step 4

Once the onions are translucent and slightly browned, slowly pour the machaca and egg mixture over the peppers and onions.

Step 5

Stir and scramble as you would when making scrambled eggs.

Step 6

As eggs firm up, mix in chopped tomato.

Step 7

Cook until eggs reach preferred consistency and serve hot.

This is a traditional Mexican breakfast dish. Because it is high in protein, it is popular among manual laborars since it tastes great and gives energy that lasts all morning.

You can experiment with different peppers, including jalapeƱos if you like your food spicy.
