Really Fattening & Really Delicious Cheddar Cheese Chowder

Ingredients

3 cups water (so far so good)
4 mediums potatoes, peeld and diced
1 medium onion, sliced
1 cup carrots, thinly sliced
1/2 cup diced green pepper (gee it still SOUNDS healthy...wazzup?)
cup butter (oh, now I get it)
cup flour
3 1/2 cups milk
4 cups (1 lb.) shredded CHEDDAR CHEESE (face it, your arteries are clogging as you read this 1 (2 oz.) jar diced pimento, drained
1/4 teaspoon Tabasco sauce

Preparation

Combine water and bouillon cubes in a Dutch oven and bring to a boil.

Add vegetables, cover and simmer 12 minutes.

Melt butter in a heavy saucepan and blend in flour (it's a roux!), cook 1 minute.

Gradually add milk; cook over medium heat until thickened, stirring CONSTANTLY.

Add cheese, stirring until melted. Stir cheese sauce, pimento and hot sauce into vegetable mixture.

Cook over low heat until heated through. BUT DO NOT BOIL.
