Jamaican Jerk Slaw

Ingredients

8 cups cabbage, thinly sliced
1 cup carrots, shredded
1 purple onion, thinly sliced
1/2 habanero pepper, seeded and very finely diced
3 cloves garlic, minced
4 tablespoons olive oil
2 tablespoons brown sugar
2 tablespoons dry jerk seasoning

Preparation

Combine cabbage, carrots, onion, radishes, habanero, garlic and cilantro in a large bowl. Set aside.

Dissolve brown sugar into cider vinegar and olive oil.

Pour liquid mixture over the vegetables and toss to coat.

Squeeze in lime juice and add the dry jerk seasoning.

Toss again, making certain that the seasoning is evenly distributed.

Cover and chill for 24 to 48 hours before serving, stirring occasionally.
