Tool: Hotel Pan


A hotel pan is a large (12" x 20") metal pan used for cooking, storing and serving food prepared for large groups of people. Food is cooked, served on a steam table or chafing dish, then covered with a lid and placed directly in the refrigerator without ever leaving the hotel pan. Hotel pans also come in 1/2, 1/3, 1/6 and 1/9 of the standard size, and are either 2, 4 or 6 inches in depth.
