5 Tasty Tomato Soup Recipes

September 21, 2011

Tomato soup easily ranks on the list of Ultimate Comfort Foods. Even now, memories from my childhood of eating tomato soup out of an oversized Campbell's coffee mug with a crispy-on-the-outside, gooey-on-the-inside grilled cheese sandwich are more than vivid. In 1962 American Pop Artist Andy Warhol immortalized Campbell's Tomato Soup Cans through a series of paintings (one of which is seen below), confiming the image as an American icon. From smooth and creamy to rich and chunky, tomato soup comes in many forms: cold Spanish gazpacho, Tuscan bread and tomato soup (Pappa al Pomodoro) to Indian curries (tikka masala being one of many). Here are 5 of my favorite (gluten free) tomato soup recipes to keep warm on rainy autumn days and cold winter nights.

Roasted Tomato Soup with Broiled Cheddar
Made in individual mugs, this super sweet recipe is perfect for a comforting lunch or easy dinner.

Tomato Leek & Basil Soup
A trifecta of deliciousness, tomato and basil go together like PB&J in my book -- add in leeks and you've got unbeatable goodness.

Roasted Tomato + Roasted Yellow Pepper Soup
Two recipes for the (viewing) price of one, this dynamic duo is sure to impress!

Tomato Coconut Soup
Using coconut milk instead of cream, this super light dish tastes like the full-cream version. Dairy free.

Roasted Tomato Soup
A classic combination, using heirloom tomatoes and fresh herbs.
