This Meatless Monday, I'm all about sweet potatoes -- an unmistakable fall flavor, from marshmallow covered casseroles at Thanksgiving (um, aren't those candied yams, anyway?), sweet potatoes are an amazing food that is seriously underappreciated! Sweet potatoes deserve to be known for more than just a healthier french fry or a traditional Thanksgiving side dish - this super starch is as versatile as its common not-so-sweet cousin. Nutritionally, sweet potatoes aren't doing too badly either: rich in dietary fiber, complex carbohydrates, vitamin A/beta carotene, vitamin C and vitamin B6, they are definitely a healthier alternative to plain ol' white potatoes.
