Black Eyed Pea and Kale Soup

January 3, 2012

Black eyed pea stew with kale is a healthy vegetable soup that is good and good for you.  This soup is flavored with aromatic garlic, spicy Cajun seasonings, and chicken sausage.  Kale is a hearty green leafy vegetable rich in calcium, vitamin K, beta carotene, and more.  When placed in the soup, the leaves soften and become tender.  Canned black eyed peas would also work in this dish so long as they are not cooked for a lengthy period of time (or else they will break down too much).  Black eyed pea and kale soup is a healthy meal that you and your family will love.
