Comforting Vegan Broccoflower Soup

This vegan broccoflower soup from Kiran Tarun is a comforting meal for any night of the week.  Broccoflower is green cauliflower.  If you can't find it in your local supermarket or farmer's market, feel free to substitute with broccoli or cauliflower.  The broccoflower is roasted is the oven with a whole head of garlic.  Then, the vegetables are pureed with coconut milk and some fragrant spices including mustard seeds, cumin, and chili powder.  Vegan broccoflower soup is a robust dish full of exploding flavors.

Ingredients:

1 medium head of broccoflower, cauliflower or broccoli – chopped
1 head of garlic, halved
1 tsp salt
2.5 tbsp coconut oil
1.5 to 2 cups of coconut milk
1/2 tsp mustard seeds
1/2 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp chili powder
optional: a squeeze of lemon juice
