Lyonaisse Potatoes

Lyonaisse Potatoes are sliced potatoes cooked with caramelized onions, butter and parsley until tender and bursting with rich flavor. Honestly, potatoes are always on my top 5 must-have foods list, but prepared in this way, they become something to crave. 

The name Lyonaisse is reminiscent of the town of Lyon, France, where they were first thought to have originated. No matter who thought of them, this simple dish cooked perfectly is the classic French achievement in the kitchen that can't be improved upon. Sure, you can add cheese and other vegetables, but the technique is perfect to bring out the best flavor in the ingredients; no more and no less. It's a must have for your recipe box.

A final note, sometimes the potatoes are parboiled before frying. This technique is also used when following the recipe for home fries that Sally Fallon recommends in her book; Nourishing Traditions. It's a wonderful way to get the best texture out of your fried potatoes without having to add copious amounts of extra flavorings.
