Gotta Have It: Rainbow Cherry Surprise Cake

For the days when you need a sweet pick me up, let me introduce you to the rainbow cherry surprise cake.  This recipe transforms a simple everyday cake mix into a truly special dessert.  Funfetti cake mix is combined with vanilla pudding mix and greek yogurt to create a thick and rich cake batter that is layered over cherry pie filling.  When the cake has baked and cooled, it is garnished with a simple homemade icing.

The thing I love about this recipe especially is the use of coconut oil as the fat of choice instead of traditional vegetable oil or butter.  Coconut oil helps create an extremely moist cake without adding any additional coconut flavor.  Coconut oil and cooking spray are widely available nowadays and can be purchased at your regular grocery store. For the cake:
1 box Funfetti Cake Mix
1 (3.4oz) Vanilla Pudding Mix
1 cup plain Greek yogurt (or sour cream)
3/4 cups LouAna Coconut Oil, melted
4 large eggs
2 to 3 tbsp colorful cake sprinkles
1 1/2 cups cherry pie filling

For the Icing:
1 cup powdered sugar
1 tbsp milk
Colorful Cake Sprinkles
