Aubergine Fritters

Preparation

Wash, dry, and then cut aubergine in 4 mm thin slices. Add a little salt, red turmeric, and cayenne red chilli powder.

Marinate for 2 hours.

Heat frying pan. Pour a little olive oil, or groundnut oil in the pan then fry aubergine slices coated with semollina or bread crumbs. Turn over on the other side and cook on slow fire till golden brown.

Remove and place on absorbent paper till dry. Serve on plate with ketchup or salsa or any sauce of your choice.

This dish goes great with any wine and its less in calories. A good vegetarian dish, with full flavour of natural aubergine(brinjal).
