Mullet (gray mullet) is a marine fish of worldwide distribution. The flesh has a distinct nutty taste and is high in protein and Omega 3's. Look for fish that have bright eyes- those will be the freshest. Mullet is generally prepared with the skin on because the flesh tends to fall apart when cooked.
