Sour or Clabbered Milk

About

Milk that has acquired a tart taste due to fermentation or the addition of lemon juice or vinegar. To create sour milk, add 1 tsp lemon juice or vinegar to one cup of milk and let sit for 5 minutes.

Sour milk, also termed clabbered milk can be created by leaving raw milk at room temperature in a cloth covered container until the milk solids separate out of the whey.

Selecting and Buying

Buying: It's unlikely that you will find sour milk at the grocer. Usually the amount called for in recipes in relatively small, so it's just as easy and cost effective to make at home using lemon juice or vinegar.
