Foie de mer is the liver of a monkfish. It is said to resemble foie gras in taste, texture, and flavor. It is prized in Japan, and occasionally available in Japanese restaurants in the U.S. It is rarely available in retail quantities in the U.S., even at fishmongers that regularly stock whole monkfish, as it is typically harvested immediately after the catch and shipped directly to Japan.
