About
Macconais, also called Chevreton de Macon, can be made from cow's or goat's milk, or a mixture of both, depending on the season. It has a faint smell of spring herbs, such as tarragon, that comes from the dense pate. Pairs well with Macon white wine, Burgundy or Beaujolais.
