Monte Veronese

An Italian cheese made from either whole or skimmed cows' milk. The rind this elastic and thin. The paste is a slight yellow-white shade. It tastes a little sharp (it becomes more sharp with age) and is fragrant. It is a cylindrical, semi-cooked, semi-firm cheese that dates back to when it was sold in the markets of Brescia and Bergamo in the early 1900s. It is used as a table cheese or for grating and is produced in Verona.
