Most coconut bubble tea is made with a powder mix for the drink portion and tapioca starch balls in the bottom. Both are prepared separately and combined just prior to serving. Sometimes the coconut part of the drink is made with coconut milk but it's not that common.

Just to avoid confusion, this is for product from Bubble Tea Supply. If you're using products from other brands then the cook times and amounts are going to be different. That's one thing to note, bubble tea ingredients are vastly different.

To make the tapioca part you boil water (7 parts water and 1 part tapioca) and then add in raw tapioca pearls. Stir to avoid clumping. Cook with a rolling boil for 15 minutes and then turn off heat and let sit for 15 minutes. The sitting part is important as it lets the tapioca set and form the nice chewy texture. Then drain, rinse and put into a container with some sugar to form a light syrup or add sugar syrup.

The drink portion is simple. One scoop each of coconut powder, non dairy creamer and sugar...add to 6 ounces of water or tea and mix well in a cocktail shaker and add 1.5 cups of ice.

To finish you add in tapioca to the bottom of the cup, pour in the coconut drink with ice, add your fat straw and enjoy.
