Yam Casserole


2 lrgs Cans yams or sweet potatoes, cup Dark Brown Sugar, packed firm
cup Honey or Dark Karo Syrup
to 1 teaspoon ground Cinnamon
teaspoon ground Nutmeg
teaspoon table Salt
teaspoon black pepper


Season your potatoes as above, seasoning them to taste. Cook them over low heat until they "candy." Be sure to stir often to prevent burning. You may need to add a very small amount of water or additional butter. Serve hot as a side dish. They can be placed in an oven dish and baked. Top with large marshmallows, if desired, just before serving. They can be mashed and topped with marshmallows or
Note: Pick red fleshed sweet potatoes, (or rarer yams) if you can find them - they are sweeter. It is easy to scrub raw sweet potatoes with a brush under cold running water. Bring them to a boil in water to cover to which you added 1 teaspoon table salt. Cook until easily fork tender. Cool in cold water. Peel. Continue as above.
