Ingredients
2 cans (11 oz) mexican style corn
2 cans (16 oz) fat free refried beans
2 cans (10 oz) diced tomatoes with habaneros (hot)
2 cans (16 oz) enchilada sauce
1 package (7 oz) shredded mexican style cheese
Preparation

Mix corn, refried beans and tomatoes together in a large bowl. Place mixture in the center of each tortilla and fold, then place in baking large baking dish. Pour sauce over tortillas. Sprinkle cheese over sauce. Bake for 30 minutes at 400 degrees (or until sauce bubbles and cheese is melted).

You can change this recipe to make it any degree of spiciness you want by changing the hot diced tomatoes with habaneros to mild or medium varieties. Also, this is great served with sour cream or guacamole...
