Gluten-Free Oatmeal-Raisin Bread

Ingredients

1/2 cup sugar
1/2 cup brown sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup raisins
1/2 cup pecans, coursely chopped
1 cup unsweetened applesauce
4 tablespoons melted butter
1/4 teaspoon vanilla

Preparation

In a medium-sized bowl, combine flour, oats, sugars, baking soda, cinnamon, salt, raisins and pecans. Set aside.

In a large mixing bowl, beat eggs, applesauce, yogurt, butter and vanilla.

Gradually stir the dry ingredients into the wet mixture until just combined.

Pour batter into a buttered 9"x5" loaf pan and bake at 350 degrees for approximately 1 hour and 10 minutes or until a toothpick inserted in the center comes out clean.

If desired, serve with a drizzle of powdered sugar icing.
