Ensaladilla

Ingredients

300 grams Potatoes cut into small cubes
200 grams Can Sweetcorn
200 grams Can of Peas
Mayonnaise
Salt pepper to taste

Preparation

Cook cubed potatoes.

Cool and place in large bowl.

Add tuna, egg, peas and sweetcorn, mix well.

Add herbs, salt and pepper, mix well.

Bind together with 2 tbs of mayonnaise.

Transfer mixture to serving dish, press into dish.

Top with more mayonnaise to seal, decorate with strips of red bell pepper, olives etc.

This is a Spanish recipe, you find it a lot in 'tapas' bars, can be served alone with crusty bread or as part of a plato combinado.
