Carrot Burger

Ingredients

1 1/2 cups diced carrots
2 cups crushed cornflakes
2 eggs, beaten
1/2 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon pepper
2 tablespoons vegetable oil

Preparation

Place carrots in a saucepan with a small amount of water. Bring to a boil, reduce heat; cover and cook for 5 minutes or until tender; drain.

In a bowl, combine carrots, cornflakes, eggs, celery, onion, salt, sugar and pepper and mix well. Form into six patties. Heat oil in a skillet over medium heat, and cook patties for 3 minutes on each side or until browned. Serve on buns.

this burger was really good! i did not have corn flakes, so i made and used bread crumbs instead... i also opted out of using the sugar. hubby and little kiddies enjoyed this burger.
