Mr. Foods Carrot Cake

Ingredients

1/2 cup honey
1/2 cup plain lowfat yogurt
1/4 cup brown sugar
1 1/2 teaspoons cinnamon
1 teaspoon baking soda
1 1/2 cups carrots, grated
1/2 cup raisins
1/2 cup walnuts, chopped

Preparation

Preheat oven to 400 degrees. In large bowl beat eggs well; add oil, honey, yogurt and sugar; mix well. Blend in flour, then add remaining ingredients and mix well. Spray an 8-inch square pan with nonstick cooking spray. Pour batter into pan and bake 35 to 40 minutes. Sprinkle confectioners sugar on cake after it has cooled. Makes 12 servings.
