Taco
Can double the meat and taco fixin's to use all the seasoning. A taco (tah-koh) is a traditional Mexican dish composed of a maize or wheat tortilla folded or rolled around a filling. The fact that a taco can be filled with practically any meat, fish, shellfish, vegetable, and cheese allows for great versatility and variety. A taco is generally eaten out of hand, without the aid of utensils, and is often accompanied by a garnish such as salsa and vegetables such as cilantro, onion, cabbage, tomato, or lettuce. The taco shell may be either crispy or soft.

- 6 shells Taco shells
- 1/4 cup sour cream
- 1 cup salsa
- 1 1/2 cup Cheddar cheese, grated
- 1 piece green onions, finely chopped
- 4 piece plum tomatoes, seeded and chopped
- Fixin's
- 1/2 head shredded lettuce
- 1/4 cup Taco Seasoning Mix
- 2 tablespoons canned green chiles, chopped
- 1 piece onion, chopped fine
- 1 pound lean ground beef
- Filling
- 3 tablespoons chili powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 teaspoons dried oregano, crushed
- 2 teaspoons ground cumin
- 2 tablespoons flour
- Taco Seasoning Mix (makes ½ cup)
Instructions
Step 1
Combine the chili powder, flour, cumin, oregano, onion powder, garlic powder, salt, and cayenne in a plastic zip-type bag; shake until completely mixed.
Step 2
Brown 1 pound of lean ground beef with 1 finely chopped onion, 2 tablespoons chopped canned green chilies, and a scant 1/4 cup of the prepared seasoning mix. Cook until the meat is completely cooked. Drain off excess fat.
Step 3
Divide 1/2 head shredded lettuce among 6 taco shells. Fill shells with the meat mixture, 4 seeded and chopped plum tomatoes, 1 finely chopped green onion, 1 1/2 cups shredded Cheddar cheese, 1 cup salsa, and 1/4 cup sour cream.
