Poisson En Sauce (Fish In Sauce, Haitian-Style)

Ingredients

1 onion, sliced in thin rings
3 tablespoons Tomato paste
2 cloves garlic, minced
2 tablespoons cider vinegar
1 fresh habañero pepper or dash of Tabasco (optional)

Preparation

Preheat oven to 350 degrees Fahrenheit.

Sauté the onion and the garlic in a fry pan, using about 2 Tbsp. oil.

In a small bowl, stir the tomato paste with a cup of water;

Stir this mixture and the vinegar into the sautéed onions and garlic.

Season with salt, pepper, and either the habanero pepper pierced with a fork, or the Tabasco to taste.

Add another cup of water, stir, and raise the heat to thicken the sauce for about 5 minutes.

Meanwhile, oil the bottom of a large (10x18-inch) rectangular baking pan;

Arrange the fish steaks in a single layer and squeeze the juice of two limes over them.

Pour the reduced sauce over the fish steaks, making sure to completely cover the fish with it.

Place the pan in the oven to bake, uncovered, for 30 minutes.

Test fish for doneness before removing from oven.

Serve garnished with fresh parsley and wedges of lime.
