Mango-Corn Relish

Ingredients

2 Ears corn, unshucked
1 Mango, peeled, seeded and cut in 1/4" dice
2 tablespoons Finely diced red onion
2 tablespoons Finely diced red pepper
1 tablespoon Finely chopped fresh cilantro
1 teaspoon Fresh lime juice
1 teaspoon Maple syrup

Preparation

Preheat oven to 350 degrees. Place unshucked corn on a baking sheet in preheated oven for 20 minutes. Remove and allow to cool. Shuck and remove silk. Cut kernels from cob, avoiding the chewy heart alongside the cob.

Combine corn with remaining ingredients and let stand for 1 hour before serving.
