Chicory Quiche With Bacon Cubes

Ingredients

750 grams Brussels chicory chopped (make sure you take out the hard part at the end)
250 grams bacon cubes
1 tablespoon olive oil
1 1/2 deciliters cream

Preparation

Heat your oven at 200°C

Add the chopped chicory and a tablespoon of olive oil

Season with pepper and salt and leave to simmer for about 25 minutes

Bake your bacon cubes and keep separately

Whisk up the egg yolks, the cream and season with nutmeg, pepper and salt

Place your shortcrust pastry in a baking tin

Prick randomly the pastry buttom with a fork

After 25 minutes pour the chicory in a colander and add the bacon cubes so that all the excessive fluids and oil can drain off

Arrange the chicory and bacon cubes on the pastry

Pour the creamy egg mixture on it and make sure it is evenly distributed on your pastry

Fold the pastry dough a bit so that it doesn't stick out and back for about 25 minutes until you have a nice gold brown crust
