When I was a child, my mother always took me to the bakery by our house and let me have one cookie. I would peer through the glass cases, admiring the sheer variety that I could choose from. In the end, however, I always ended up getting the same one, a Mexican wedding cookie. These fragile cookies melt in your mouth (it could be all that butter). Once I got into baking, I started making them myself. These cookies are incredibly easy to make and require few ingredients. Next time you get a hankering for something sweet, try these.
Ingredients:
2 sticks butter, room temperature
2 cups powdered sugar
2 teaspoons vanilla extract
2 cups all purpose flour
1 cup pecans, toasted, coarsely ground
1/8 teaspoon ground cinnamon
